| Put carp fillet in a pot. This picture is when the cooking water has boiled. Scum rises to the surface. |

| Skim the scum off with a ladle. |
|
 |
| This is the state when all the scum has been removed. |

| Add soy sauce first, and then add sugar (chuzarato, or zarame: granulated cane suger). |

| Add nikogori (the boiled down sauce made from the previously cooked umani). |
|
 |
| When the pot comes to a boil, skim the scum of the surface again, and boil it again with a small lid placed over the fillet (for about 2 to 3 hours, depending on the number of fillet). |
|
 |
| The cooking is now complete. |
