Put carp fillet in a pot. This picture is when the cooking water has boiled. Scum rises to the surface.
Skim the scum off with a ladle.
This is the state when all the scum has been removed.
Add soy sauce first, and then add sugar (chuzarato, or zarame: granulated cane suger).
Add nikogori (the boiled down sauce made from the previously cooked umani).
When the pot comes to a boil, skim the scum of the surface again, and boil it again with a small lid placed over the fillet (for about 2 to 3 hours, depending on the number of fillet).
The cooking is now complete.
